Kale, Bruce, and Random Thoughts from a Sleep-Deprived Brain

DANGER WILL ROBINSON! DANGER!

After another lovely evening of no sleep thanks to the hubby nursing a cold, (exactly how DOES one make noises like THAT?!?), the dollars are whipping around the brain this morning like Usain Bolt.  What started out as an idea for a boring post about kale salad, (have no fear my veggie-loving friends, I’m still going there), has morphed into a multi-subject menagerie.  So hang on ’cause here we go!

For the first time in more years than I can remember, last spring I decided to act like an adult for just a few minutes and go for a physical.  Thankfully everything came back fine except for a low iron level.  Now being a pescetarian, the only animal products I consume are dairy (hello ice cream!), and some fish.  Obviously, this presented a slight conundrum to my iron-challenged blood.  Thanks to my cooking connoisseur BFF Darla, I was introduced to the leafy green world of kale.  Oh sweet taste bud happy dance!  Low in calories, packed with Vitamins A, C, and K, this cholesterol-fighting superfood is a great source of minerals including good ol’ iron.  Yippee!!!!

For those of you who know me, I view the kitchen as a necessary evil.  I try to fuel my body with as much healthy stuff as I can, but I hate spending more than 5 minutes at a time in my kitchen.  So when I found this recipe on The Meaning of Pie  and discovered it only took a few minutes to throw together, I was in green leafy heaven.

The best part is you only need a few ingredients, the fresher the better.

Preparation:

Salad: 1 bunch curly kale, chopped thinly

1 cup pine nuts (no need to toast)

1 cup shredded parmesan cheese

salt and pepper, to taste

Dressing: 1 lemon, juiced

½ cup olive oil

Wash and dry the kale. Remove the stems and chop it into strips by rolling the leaves into a ball and making thin slices. Cut it all once again going in the other direction so you end up with a pile of nicely chopped greens.

In a small jar, combine the juice of one lemon and the olive oil. Put a lid on the jar and shake it vigorously.

Add the pine nuts and cheese to the greens and toss them to combine. Add the dressing to the greens, and again, toss to combine. Season with salt and pepper, as needed.

Oh Happy Day!  You can play with the amount of ingredients if, like me, you live with a hubby who runs out of the room screaming if any green food comes within 10 feet of him.  I personally found the juice of a whole lemon to be a bit too strong, so I use just half.  You can also add a small pinch of sea salt for added flavor, but as I like to try to limit my salt intake, I just skip it.  It still tastes awesome.  One good tip: check teeth before going out for the evening.  Nothing like kale mouth to put a damper on your date.

Thanks to maternal family ties, I seem to have an affinity for all things New Jersey.  Except for that group of badly-tanned-too-much-eyeliner-and-hair-gel-not-really-sure-what-they-do-if-anything-seemingly-common-sense-challenged twenty-somethings.  Yeah them.  Not going there.  Bring on the music though, and these guys are ALL ME.

Imagine my surprise when, on my drive into work today I hear my fave radio personalities playing a clip of Bruce playing his rendition of “Stayin’ Alive”.  Not really sure what to make of it.  Love it or hate, that polyester-laden movie and its music will always be with us.  Yikes!

On a sad note, former Miami Hurricanes football player Jojo Nicolas died last night after suffering critical injuries sustained in a car crash.  The 25 year-old had been out celebrating his birthday when his vehicle ran into the back of an 18-wheeler.

I was lucky enough to see Nicolas play when he was with the Hurricanes.  What struck me most about this young talent was during his time at The U, he lost an infant son who was born prematurely.  I can’t imagine what it’s like to lose a child, but Nicolas dealt with it the best way he knew how – strap on his helmet and go to work.  Nicolas was drafted as a free agent for the New York Giants, but was released after training camp.

Nicolas was a talented player and had his whole life in front of him.  Makes you appreciate how life can just turn on a dime, so you better appreciate it while you’ve got it.
